A traditional Japanese breakfast is a beautifully balanced, nutrient-dense morning ritual rooted in the concept of ichi ju san sai—meaning "one soup, three dishes". Rather than sugary pastries, it is designed to nourish the body with savory, umami-rich foods to provide sustained energy for the day. If you have traveled to Japan, you might have experienced the format at traditional inns and hotels. 

Kanako will walk you through the basics of Japanese cooking through some typical breakfast dishes, such as cooking rice, dashi broth, omlette and pickles. 

At the end of the class, you'll plate your own breakfast plate and share with others, sitting at the tables inside Dumpline Tzar bar and restaurant, which is in the same building.  You can order drinks from the bar (not included in the ticket) or go to Baci Baci cofee/tea shop nextdoor with a coupon (included in the ticket). 

Class Content:

1. Overview of Japanese breakfast  with the "Ichiju Sansai" concept

2. Demo and hands-on:

  • Cook Japanese Rice
  • Make Dashi
  • Make Miso Soup
  • Make Tamagoyaki
  • Make Shio Sake (Broiled Salmon)
  • Make Quick Pickles
  • Make a vegetable dish (TBD)
  • Natto Tasting with organic artisan natto by Wa-Labo kitchen

NOTE: The class is a mix of educational talk, demos and hands-on, but it's not super hands-on heavy. You'll get to work together on the dishes as a team. Some dishes will be pre-made before the class such as pickles.
